Iran’s Caviar Production Grows by 17%
TEHRAN (Iran News) Karami Rad announced that the country’s caviar output rose from 21.6 metric tons in 2023 (Iranian calendar year 1402) to 25.1 metric tons last year.
Speaking to ILNA via the Ministry of Agriculture Jihad, he highlighted the significant expansion of sturgeon farming across 22 provinces. He noted that thanks to favorable climate conditions, the second phase of development has set ambitious targets: producing over 140 tons of caviar and 20,000 tons of sturgeon meat.

Last year, production of sturgeon meat reached more than 6,050 tons—representing a 26% increase compared to 2023.
Karami Rad also reported that over 7.5 tons of caviar were exported directly through customs channels. Additionally, a significant volume of Iranian caviar is estimated to have left the country via travelers and in luggage.
“Iranian caviar remains unrivaled in the global market and retains its dedicated customers,” he said. “With this ongoing growth, the country’s production and export capacity for sturgeon products is increasing, creating new opportunities for investment.”
